This ham is produced with iberian pigs mainly fed with acorns and free-ranging and have a minimum maturing of 36 months.

The fat or fatty infiltrations or veins in Julián Becerro iberian pork products do not damage your health. It does not need to be removed as it is good, healthy and highly recommendable.
White spots in ham slices are caused by a build-up of tyrosine crystals, an amino acid in the proteins that are created during the maturing and drying process of ham as a consequence of the chemical reactions taking place between the proteins and the enzymes in the meat. High concentrations of salt inhibit this enzyme activity while low concentrations favour it. This is why these white spots or pin points do not show up in ham with an excess of salt whereas, in the case of Julián Becerro hams, they are almost always present due to its low salt content and the graranteed lengthy curing and maturing process.
