Los Peperetes present us these delicious canned white clams artisanally produced.
The clams arrive alive at the factory and are submerged in containers with sea water where they naturally loose all the sand. Without sand, the clams are steamed, shelled and carefully washed in lightly-salted water. After that the clams are canned adding the sauce (water and salt) to preserve their full flavor. Finally the can is sealed and sterilised for their preservation. The clam used to do this preserve is called CARPET SHELLS.
The best way to eat them is jus opening the can and served with a good white wine.
